I think that the documentation is complete.

The options are specific for the foreign data wrapper you are using,
so if you want documentation about them, look at the FDW's documentation.

In the case of postgres_fdw, that would be
https://www.postgresql.org/docs/current/postgres-fdw.html#POSTGRES-FDW-OPTIONS
